History - There exists in southern France a forgotten treasure : Carignan, an old traditional grape variety present in the region for well over 80 years. Baron de Baussac Carignan is produced from low yielding vines, some of them as old as 60 years, giving a wine with silky texture and intense aromas of spice with a pleasant touch of vanilla on the finish.

Regional Information - Hérault is located between the southern French Mediterranean coastline and the grand Black Mountains in the north. As the region's name giver, the river Hérault has its spring there at an altitude of about 1400m. It shaped the impressing canyon "gorges de l'Hérault" where it streams through and ends up after 148km in the sea near the ancient city of Agde.
Vinification Details - The winemaking process was carried out in a modern style. After harvest, the grapes are destemmed and crushed. A part passes through the modern process of hot maceration, extracting fruity aromas, the other part goes through a traditional fermentation in concrete tanks, with regular pumping over, extracting colour and tannins. At the end of the winemaking process, both sections are blended together into a youthful and easy-drinking wine. The wine is aged on its fine lees for 4 months.
