History - Levalet Marsanne-Viognier is a fruity white wine produced from grapes harvested in the Languedoc region, South of France.
Producer - L'Union des Vignerons
Regional Information - The vines are located in the south / south-east part of the Pays d'Oc wine region that stretches from the Canal du Midi in the south, to the piedmont of the Black Mountain in the north. This is a hot and dry Mediterranean terroir, where the vines meet the garrigue. The area is strongly influenced by the Mediterranean Sea (only 30 km away).
Vinification Details - The grapes are harvested separately in the early morning. They are pressed as soon as they reach the cellar to enhance the freshness of the wine as well as to avoid oxidation. Both varieties are fermented separately in order to develop their specific characteristics. Fermentation happens in temperature controlled stainless steel tanks to keep as much fruit as possible. Ageing on fine lees lasts 4 months.
