Producer - Spring Creek Vintners
Regional Information - The terroir, a combination of a cool maritime climate and ideal vineyard soils, create vibrant aromatics, concentrated fruit flavour and crisp acidity in our Sauvignon Blanc grapes.
Vinification Details - Once harvested, the fruit was gently pressed. Juice was fermented in stainless steel, with selected yeast strains to enhance aromatics, thiol development and palate weight. The cooler fermentations retained the aromatics and freshness. The wine was kept on lees for three months, prior to bottling.
