Producer - Domaines BONFILS
Regional Information - The 70 hectares of this domain surround the Château de Sainte Marthe in the parish of Roujan, between the villages of Pézenas and Faugères. At mid distance between the Cevennes and the Mediterranean, it is also close to the Priory of Cassan.
Vinification Details - The syrah which is grown on this terroir is able to truly express its character with yields around 40hl/ha. The wine is made the traditional way with daily racking and stirring of the must.
The maceration in the cuves can last up to 75 days depending on the vintage and in accordance with daily tastings. The wine then ages in vats for several months to bring softness and well melted tannins.
