They were then pressed gently, cooled down to 5°C and the heavier matter was allowed to settle naturally, leaving behind a clean juice with enhanced fruit defi nition. The juice was then fermented at low temperatures of 14-16°C &#x2F; 57-61°F for approximately 3 weeks in stainless steel. The slate soils also play an important role in that they absorb the heat of the day and give it back to the vines at night, thereby aiding ripening. Due to the steepness of the slopes, all the work in the vineyards, including the harvest, has to be done by hand.<br/>Vinification Details - The grapes are picked by hand in late September and gently pressed before a long, cool fermentation with selected yeasts in stainless steel for up to three weeks.
