If freezing, freeze on the day of purchase and consume within 1 month. Defrost thoroughly in refrigerator before cooking and use within 24 hours. Once thawed do not refreeze.

Cooking Guidelines
Oven cook - From Chilled - Cooking times will vary with appliances, the following are guidelines only. Remove all packaging and allow meat to come up to room temperature for 30 minutes before cooking. Drizzle with a little oil and season with salt and freshly ground black pepper.
190°C, Fan 170°C, Gas 5
Medium 25 mins. per 500g + 25 mins. extra
Well done 30 mins. per 500g + 25 mins. extra
Preheat oven. Place the lamb on a roasting tray on the middle shelf of the oven and cook for times indicated.
Allow the joint to rest for 10 minutes before carving. Carve using a sharp knife. Do not reheat.
