History - The Monastier brand was created 15 years ago. Its authentic and elegant packaging conveys the importance of our region and its history. The cross on the Monastier labels, is known in the South of France as an emblem of this mix of cultures.
Today, the Monastier brand still stands strong thanks to the partnership our winemakers entertain with the local producers. By combining the brand's authenticity with new winemaking techniques, they continue to offer a modern, light and easy-drinking range.
Producer - Le Cellier d'Eole
Regional Information - Monastier Cabernet Sauvignon winemaking: Cabernet Sauvignon needs ripe grapes to show its full potential which is why our winemakers carefully choose the time for harvesting each particular vineyard. The grapes are destemmed and crushed before they are sent to macerate for about four weeks. This long process is ideal to extract the fruity character of the variety. About one third of the blend is aged with half-toasted French oak adding complexity to the wine.
Vinification Details - Monastier Sauvignon Blanc winemaking process is lead very carefully in order to best respect the integrity of the berry and preserve the delicate perfumes of the variety. The grapes first undergo a 6 hours skin contact maceration to extract as much of the fruit aromas as possible. After a gentle pressing, the must is cold settled meticulously. The fermentation is then led at a cold temperature before the wine is aged for three months on its fine lees, increasing the smoothness of the texture.
