Remove all packaging and allow meat to come up to room temperature for 30 minutes before cooking. Drizzle with a little oil and season with salt and freshly ground black pepper.<br/> 160°C, Fan 140°C, Gas 3, 2hrs. 30mins.<br/> Preheat oven. Cover the lamb with foil, place on a roasting tray on the middle shelf of the oven and cook for time indicated. Remove the foil for the last 30 minutes of cooking time to brown the skin.<br/> Allow the joint to rest for 10 minutes before carving.
