Pumpkin & Spice Baby Amazeballs

1 cup pumpkin purée (roast pumpkin and blitz)
1 cup oats
1 cup desiccated coconut
90g or 1/3 cup smooth peanut butter
1 tbsp maple syrup
1/4 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1 tbsp coconut oil
1 bar good quality raw chocolate

INGREDIENTS
- 1 cup pumpkin purée (roast pumpkin and blitz)
- 1 cup oats
- 1 cup desiccated coconut
- 90g or 1/3 cup smooth peanut butter
- 1 tbsp maple syrup
- 1/4 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 1 tbsp coconut oil
- 1 bar good quality raw chocolate
METHOD
- Add all of the ingredients with the exception of the chocolate to a food processor and process until it starts to come together.
- Pour the mixture into a bowl and leave in the fridge for about 1 hour to allow it to thicken slightly.
- Remove from the fridge, and roll into bite sized balls, then return to the fridge.
- Heat the chocolate in a bowl over some warm water until it melts, then dip each of the balls into the chocolate and return to the fridge to set fully.
