Regional Information - The Kalkstein vineyards are located in the northern Pfalz - Mittelhardt. The soils are rich in limestone (German = Kalkstein), created by ancient sea deposits. The literal foundation stone of limestone was laid millions of years ago. This type of soil is relatively thin & porous, encourages deep roots, creating fine and elegant wines. Grown in one of Germany's driest and sunniest wine regions, the long season enables the Riesling grapes to develop lush stone fruit flavours such as peach and apricot.
Vinification Details - De-alcoholising wine is a complex process. Loss of alcohol & original base wine characteristics tend to change the overall aromatic framework. Before de-alcoholisation, the wine is held in temperature-controlled stainless-steel tanks allowing the wine to retain its natural structure and flavour. Riesling is an appropriate variety to de-alcoholise, important elements of the aromatic profile are retained. Stronger fruit-components are toned down, mineral, vegetal, herbal elements become more prominent.
