History - Domaine de la Bastide is a 19 th Century Wine Domaine, South of France, extensively restored as a luxury self catering estate and boutique winery to
become Château Les Carrasses.
Abandoned between 1988 and 2011 the winery at La Bastide has been brought back to life, and now produces a great range of high quality wines to
be sampled in the restaurant or taken away from the cellar door.
Producer - Domaines BONFILS
Regional Information - The vineyard of Domaine de la Bastide covers 55 ha around the Château de la Bastide in the foothills of the Cevennes.
Vinification Details - Yields are low which helps the grapes achieve good concentration. The vinification is made traditionally with constant stirring and pumping, punching
of the cap which forms on the top and temperature control.
