Topped with delicious creamy slaw and an unbelievable mayo (trust us on this!). <br/> <br/> <br/> INGREDIENTS: <br/> For the burgers:<br/> 1 tin Epicure Organic Borlotti Beans in Water<br/> 1 tin Epicure Organic Red Kidney Beans in Water<br/> 1 tbsp Olive oil<br/> 1 Red pepper, finely chopped<br/> 1 Onion, finely chopped<br/> 1 tbsp Epicure Chopped Garlic<br/> 1.5 tsp Ground cumin<br/> 1 tsp Chilli powder<br/> ½ tsp Garlic Powder<br/> ½ tsp Smoked Paprika<br/> 50g Oats, blitzed to flour<br/> 75g Feta cheese<br/> 2 Large eggs<br/> 3 tbsp BBQ sauce<br/> salt and pepper to season <br/> <br/> For the slaw:<br/> 200g White cabbage, finely chopped<br/> 100g Carrot, cut into ribbons<br/> 75g Avocado<br/> 15g Lime juice<br/> 1 Garlic clove<br/> 50g Natural yoghurt<br/> <br/> For the mayo:<br/> 80g Mayonnaise<br/> 20g Epicure Sun Dried Tomato Puree<br/> <br/> 4 Burger buns/ciabatta rolls to serve<br/> Fresh coriander <br/> <br/> <br/> METHOD : <br/> Heat the olive oil in a pan, and add the chopped pepper, onion, garlic and fry over medium heat until soft, about 5-6 minutes.<br/> Transfer into a large bowl and add the beans. Using a potato masher, mash the beans until you have a smooth texture with some larger chunks of beans.<br/> Now add the remaining ingredients (cumin, chilli powder, garlic powder, smoked paprika, oat flour, feta, eggs, BBQ sauce, salt, pepper). Stir together until everything is combined.<br/> Form into patties about 1/3 cup of mixture in each. Place the patties on a baking paper lined tray and bake at 190C for 10 minutes on each side, 20 minutes total.<br/> Blend the avocado, lime juice, garlic clove and yoghurt and mix with the chopped cabbage and carrot to make the slaw.<br/> Mix the mayonnaise with the sun-dried tomato pure and you are ready to stack your burgers.<br/> Slice burger buns/ciabatta rolls in half and smother with the mayonnaise. Next place your burger on the bun, top with a spoonful of slaw and a sprinkling of fresh coriander.<br/> <br/> <br/> TIP: Freeze after cooking, wrapping each patty individually.
