History - Old Roman then Cathar territory, Laurent Bonfils family has settled on the heights of this hill surrounded by pine groves in 1979. The 92 ha of east / west facing vineyards located on hillsides and terraces is an ideal terroir for Chardonnay and Pinot Noir.

Regional Information - Domaine de Cibadiès overlooks the Canal du Midi valley.
Vinification Details - For Pinot noir, the grapes are harvested at night in perfect sanitary condition at optimum maturity and the wine is made in the traditional manner in stainlesssteel tanks, maceration for two weeks and regular cap punching. Careful harvesting and handling enable this Pinot Noir, which is a variety particularly sensitive to oxidation, to fully express its varietal nature and develop fineand characteristic aromas of wild berries.
