Cooking Guidelines
Oven cook - From Chilled - Cooking times will vary with appliances, the following are guidelines only. Remove all packaging and allow the meat to come up to room temperature for 45 minutes before cooking. Drizzle with a little olive oil and season with sea salt and cracked black pepper.
180ºC, Fan 160ºC, Gas 4
Rare 30 mins. per 500g + 25 mins. Extra
Medium 35 mins. per 500g + 25 mins. Extra
Well Done 40 mins. per 500g + 25 mins. Extra
Preheat oven. Sear the joint all over on a dry, hot frying pan. Transfer the joint to a roasting tray and add a little water. Place on the middle shelf of the oven and cook for times indicated.
Allow the Joint to Rest for 10 Minutes Before Carving. Carve Thinly Using A Sharp Knife. Do Not Reheat.
