Ingredients
500g hake fillets
3 red and yellow peppers, sliced
1 red onion, sliced
1 clove garlic, sliced
2 tbsp olive oil
Salt
Pepper
100g bread crumbs
2 tbsp grated cheddar
2 tbsp flat leaf parsley, finely chopped
1 tsp thyme leaves
Directions

INGREDIENTS

  • 500g hake fillets
  • 3 red and yellow peppers, sliced
  • 1 red onion, sliced
  • 1 clove garlic, sliced
  • 1 tbsp olive oil
  • Salt and pepper

For the crumb:

  • 100g bread crumbs
  • 2 tbsp grated cheddar
  • 2 tbsp flat leaf parsley, finely chopped
  • 1 tsp thyme leaves
  • 1 tbsp olive oil

METHOD

  1. Preheat oven to 200℃ fan. Mix the ingredients for the crumb together and set aside.
  2. In a large roasting tray, arrange the peppers, onion and garlic in an even layer and then lay the hake fillets on top.
  3. Spoon the bread crumb mixture over the top of the fish and drizzle everything evenly with olive oil. Season with salt and pepper and place in the oven to bake for 15 minutes.
  4. Serve to the table with lemon wedges to squeeze over the top.
