Sauvignon Blanc has only been allowed to be grown in Germany for the last 20 years but it has adapted very well to Germany's cool climate.

Regional Information - The Pfalz is one of Germany's key wine-producing regions and is situated in the south-west, across the border from Alsace. The weather here is generally sunny and dry, as the vineyards are in the lee of the Haardt Mountains. The limestone soil is 20-25 million years old resulting from ancient sea sedimentations. This relatively thin and porous soil allows the vines to root deeply giving ideal growing conditions for the grapes and resulting in elegant and varietally typical Sauvignon Blanc wines.
Vinification Details - The Sauvignon Blanc grapes are harvested early in the morning and protected with carbonic ice before being swiftly and very gently pressed. Fermentation is carried out reductively at cool temperatures with selected yeasts in order to maximize fruit flavours and freshness.The wine remains on the fine lees for 4-5 months in order to gain a little weight and complexity.
