Regional Information - This region benefits from the Mediterranean climate while the Black Mountain brings enough humidity and cool temperatures to enable the vineyards to produce grapes packed with fruity aromas.
Vinification Details - The grapes are harvested at night, when the temperatures are low, in order to prevent oxidation and preserve the subtle fruit aromas. After a gentle pressing, the juices ferment at a low temperature, enhancing the variety's aromatic profile. The wine stays on its fine lees for at least two months and is stirred periodically, providing its smooth texture.
