Here, the vineyards are shaped by the winds that flow in between the Pyrenees and the Black Mountain. These winds are very useful for the winemaker as they protect the vines from disease and blow a cool breeze through the vineyards during summer, particularly in the early morning.
Vinification Details - The grapes are harvested separately in the early morning. They are pressed as soon as they reach the cellar to enhance the freshness of the wine as well as to avoid oxidation. Both varieties are fermented separately in order to develop their specific characteristics. Fermentation happens in temperature controlled stainless steel tanks to keep as much fruit as possible. Ageing on fine lees lasts 4 months.
