History - The legend of Ferrari began with a man, Giulio Ferrari, and his dream of creating a wine in Trentino capable of competing with the best French Champagnes. As he had no children, Giulio Ferrari began looking for a successor to whom he could entrust his dream. Among many candidates he chose Bruno Lunelli, owner of a wine shop in Trento. Thanks to his passion and entrepreneurial talent, Bruno Lunelli succeeded in increasing production without ever compromising on quality.
Producer - Ferrari Trento
Regional Information - With its mountain viticulture, Trentino is an area that is extraordinarily suited to the production of sparkling wines of great elegance and complexity: the alternation of warm days and cool nights gives added quality to the grapes, giving them a rainbow of different flavours and fragrances.
Vinification Details - Late summer, when the Chardonnay grapes are ripe, they're picked by hand and taken to the winery, to be pressed. Then we have first fermentation, from which derive the rich aromas. After the creation of the cuvée, the base wine is bottled and enriched with sugars and selected yeasts. Second fermentation begins. The cuvée then remains in the bottle for between two and ten years, depending on the individual wine. In the silence of the cellar the daily ritual of remuage carried out.
