Keep Refrigerated 0ºC to +4ºC. Consume within 24 hours of opening and by 'use by' date. For 'use by' date and weight, see top of pack. Suitable for home freezing. If freezing, freeze on the day of purchase and consume within 1 month. Defrost thoroughly in refrigerator before cooking and use within 24 hours. Once thawed do not refreeze.

Cooking Guidelines
Oven cook - From Chilled - Cooking times will vary with appliances, the following are guidelines only. Remove all packaging, leave the string on the joint and allow meat to come up to room temperature for 45 minutes before cooking. Drizzle with a little oil and season with salt and freshly ground black pepper.
200ºC, Fan 180ºC, Gas 6
Rare 20 mins. per 500g + 20 mins. Extra
Medium 25 mins. per 500g + 25 mins. Extra
Well Done 30 mins. per 500g + 30 mins. Extra
Preheat oven. Sear the joint all over on a dry, hot frying pan. Transfer the joint to a roasting tray, place on the middle shelf of the oven and cook for times indicated.
Allow joint to rest for 10 minutes before carving. Remove string prior to carving and carve thinly using a sharp knife. Do not reheat.
