Regional Information - A selection of parcels from Domaine de la Bastide, situated at Capestang, southwest of Béziers, in the heart of the Languedoc-Roussillon. The vines are planted on the first foothills of the Cevennes, nestling under the ridges of Saint-Chinian. Here they have found their terroir of predilection on the southern slopes of these limestone clay hills, benefitting fully from the Mediterranean climate
Vinification Details - Skin maceration, pneumatique pressing. The grapes, the must and the wine are protected from oxidation all through the winemaking process. Temperature controlled fermentation around 16°. Regular stirring and maturing on fine lees confer a rich opulence on the palate
