Merlot Cabernet

Winemaking:
For this premium wine, the grapes are selected from special vineyards with a low yield. They are mechanically harvested when the temperatures are low to avoid oxidation. 50% of the grapes go through the process of thermovinification to rapidly extract all the colour, aromas and tannins from the fruit. This part of the wine is fermented at low temperature, 20°C, to keep all the fruity aromas. The other 50% follows a traditional vinification process in tanks. This way, the colour is extracted naturally from the skins. During 20 days, the juices are pumped-over twice a day before they are fermented between 27-30°C. The merlot is then aged in contact with American staves, giving the wine its complexity and vanilla hints. The cabernet is aged in contact with French staves to create a premium blend.

The landscapes of Gascony spread from the Atlantic Ocean to the Pyrenees, providing fascinating Terroirs. Southern French sun-kissed days promote ripe grapes packed full of sunshine. On the other hand, the Atlantic brings chilly ocean breezes and cool nights which improves the lovely fruity aromas. The clay and sand soils store water during the rainy spring which is then released when the vines grow, enabling them to get through the dry summers.
