History - The 70 hectares of this domain surround the Château de Sainte Marthe in the parish of Roujan, between the villages of Pézenas and Faugères. At mid distance between the Cevennes and the Mediterranean, it is also close to the Priory of Cassan. It is the property of Olivier Bonfils, the oldest brother of the family. It was here, that in the 1980s that the Bonfils decided to vinify their fist AOC wine. The first batch was then sold in less than two days and set the path for the company's future: making the best wines possible with passion and know-how.

Regional Information - The vineyard is composed of gravelly clay soils, with marl, sandstone and red shale. Planted on hillsides, the vines benefit from a particularly favourable exposure and a Mediterranean climate.
Vinification Details - This wine is made with care: harvested at optimum maturity, cold pre-fermentation maceration for the Grenache and long maceration with regular pumping over for the Syrah and Mourvèdre. The wine is then matured in French oak barrels made from selected wood from the Tronçais forest for 18 months, with regular stirring for the first 6 months.
