Description

Carignan

Further Description
The grapes used to craft this top-quality wine are carefully selected from our best Carignan vines, in unique terroirs. They are harvested early in the morning when the temperatures are low in order to keep the grapes fresh and avoid oxidation. Small part of the crop goes through the process of thermo vinification to extract fruity aromas. This part of the wine is fermented at low temperature to keep all the fruity profile. The other part of the crop follows a traditional winemaking process in tanks. This way, the colour is extracted naturally from the skins. During 20 days, the juices are pumped-over twice a day before being fermented at 27°C. Once the fermentation process is over, 50% of the wine is aged with French staves for 5 months before bottling.
