Baby Breakfast Cookies

Ingredients
1/3 cup olive oil
2 bananas
1 egg
1 tsp cinnamon
1/2 tsp baking soda
1 cup oats
1 cup whole wheat flour
2 apples
Directions
Makes 10-16 cookies (divide into smaller sizes for babies)

- 1/2 tsp baking soda
- 1 cup oats
- 1 cup whole wheat flour
- 2 apples
TO SERVE
Serve with a side of fruit for a really easy and quick baby led weaning breakfast idea
METHOD
- Preheat oven to 180ºC/350ºF.
- Add the oil to a mixing bowl.
- Then press the bananas before opening which helps to soften them.
- Peel and add to the bowl along with the egg, then using a fork, mash well until smooth.
- Peel the apples, then finely dice and add to the cookie mixture.
- Use an ice cream scoop to divide the mixture into cookies. For smaller babies 6 months-12 months, divide into roughly 1 heaped tablespoon-sized cookies.
- Press the mixture down slightly using the back of the spoon.
- Bake for 25-30 minutes until a skewer comes out clean and the apple is soft.
🫙 Store in an airtight container for 5 days or freeze.
